One of our most asked for dinners is anything involving noodles. The kids (and husband) usually do not care what comes with them, as long as they get their carb fix.

We were at my youngest brother in law’s state basketball tournament last year, and ate at Noodles & Company. I have been trying to widen my palette and try something new everywhere I go. Here, I had tried Penne Rosa for the first time, and fell in love. With a tomato base with spice and cream, you cannot go wrong!

As a stay at home mom, I make it my goal to make as many meals as I can at home and constantly try to switch it up with new recipes and a variety of flavors. When you make this, I strongly suggest roasting your own tomatoes, instead of the usual skillet cooking. Feel free to use my recipe here.

Penne Rosa

Roasted tomatoes and garlic, creamy sauce and a healthy serving of spinach... Does it get any better?

Cook Time 30 minutes
Servings 6 Servings


  • 1 1/2 C Roasted Tomatoes & Garlic see link above
  • 4 C Fresh Spinach
  • 1/2 C Marinara Sauce
  • 1/2 C C Cream Cheese
  • 12 Oz Penne, Cooked
  • Pinch Red Pepper Flakes
  • Salt & Pepper to taste


  1. Cook noodles as directed by packaging

  2. In a large skillet with a lid, add tomatoes & garlic, spinach, salt & pepper and red pepper flakes. Cook until spinach wilts.

  3. Add cream cheese and marinara sauce. Let cheese melt completely.

  4. Add noodles and blend all together.
