This year our garden was overtaken with tomatoes and zucchini. So much so, that I had researched for hours, just how many different things I could do with both! Thankfully, I have a little one who absolutely loves vegetables, so playing around with a variety of recipes was far more fun that I anticipated!
For the cherry tomatoes, I had quite the stash built up, and no idea what to do with them. Did some digging and kept going back to oven roasting them with garlic.
The simplicity of roasting them blew my mind and will always be my go to for any leftover tomatoes. Your house will smell like a pizzeria and have your taste buds exploding. The prep is easy and you need so few ingredients.
Oven Roasted Cherry Tomatoes
These tomatoes can give any meal the rustic flair it needs. The aromas throughout your house will leave your mouth watering and stomach yearning for roasted heaven.
- 3 C Cherry Tomato
- 3 Tsp Minced Garlic
- Salt & Pepper to taste
- Olive Oil
Preheat oven to 275 degrees
Drizzle olive oil on the bottom of a sheet pan
Slice cherry tomatoes in half and place on pan
Add garlic and mix in with tomatoes and oil
Sprinkle with salt & pepper to taste.
Roast in the oven for 45-60 min. Depending on oven.
