As a busy mom with two toddlers, I love anything that makes a task quicker. I also like to make our snacks instead of buying them to save money. Every week, I make one batch of sweets whether it is cookies, cakes, or a new recipe. For Halloween we did Mummy sugar cookies and my little man helped!
Sugar cookies are great for any time of the year, you can make them round or use cutters and adjust to the time of year. These are so simple your littles can jump right in, they don’t take too much time so they won’t lose interest and they bake so quick!
If you don’t have a frosting recipe, here is the one I used and will probably use on everything!
No Chill Sugar Cookies
Delicious, moist and quick sugar cookies perfect for Christmas time!
- 1 C Unsalted Butter Slightly softened
- 1 C Granulated White Sugar
- 1 1/2 Tsp Almond Extract
- 1 Egg
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 3 C AP Flour
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
In a stand mixer, cream butter and sugar together until smooth. This may take a few minutes.
Beat in egg and almond extract.
In a separate bowl combine baking powder, salt and flour. Then add a little flour mix to bowl at a time. Texture should be about that of play doh.
Divide in to workable batches. Lightly flour your counter and roll dough out to roughly 1/4" thick. This will give you soft yet sturdy cookies to decorate.
Cut cookies in to any shape. Bake for 6-8 minutes. Let cool on cookie sheet for about minutes and transfer to a cooling rack. Decorate when completely cool.
Feel free to substitute vanilla extract for any or all of the almond.
You will want to pull cookies from the oven before the edges start to turn golden or brown.
