Breakfast is a favorite for any time of day in our house. If my son could eat eggs for every meal, and the rest of us could stand to eat them that much, that’s all we would eat! On the other hand, my daughter can’t go a meal without veggies and my husband is the same with meat. Myself, I prefer potatoes… all day, in everything! This meal is a perfect combination for all of us to enjoy!

It is so quick and easy to throw together, it is perfect for a busy family and will satisfy everyone’s cravings. The best part is you can adapt it to your family and switch out almost any ingredient to suit you.

Breakfast Hash

A quick and easy breakfast that’s both filling and delicious!

Ingredients

  • 2 Tbsp. Oil
  • 2 Russet Potatoes Diced
  • Salt & Pepper To taste
  • 1 1/2 Tsp Seasoning Salt
  • 1/2 Pkg Sausage Links
  • 1 C. Roasted Onions & Peppers (I used Schwan’s)
  • 5 Eggs
  • Milk

Instructions

  1. Heat 1 Tbsp. oil in a large skillet and 1 Tbsp. in a medium skillet. 

  2. Cut sausage links in to bite size pieces and place in large skillet. Stir occasionally so they don’t stick. 

  3. Dice potatoes and place in medium skillet. Season with salt, pepper & seasoning salt. Stir to coat. Occasionally stirring for about 5 minutes or until tender. 

  4. While those are cooking, whisk eggs and milk for scrambled eggs. I usually eye ball it depending on amount of eggs. 

  5. Add onions and peppers to sausage and cook until onions are transparent. 

  6. When potatoes are tender and sausage is mostly cooked; transfer potatoes to large skillet with sausage. It’s okay if neither are fully cooked, they will continue to cook while eggs are cooking. 

  7. Pour eggs in to the medium skillet that you cooked the potatoes in. Don’t worry about cleaning it, it will marry the flavors together and season the eggs slightly. 

  8. When eggs are done, transfer to the large skillet and combine all ingredients. 

  9. Serve with toast or biscuits! Enjoy!! 

Recipe Notes

  • You can switch sausage links out for 1/2 lb. of ground sausage, kielbasa or whatever you have on hand.  
  • If you have hash browns instead of potatoes, those would be great too! 
  • This a very subjective meal, you can easily switch out any component for whatever is on hand or leave something out. It will still have tons of flavor!
