Looking for something healthy and fresh? Enjoy a bowl of my take on caprese salad. I love spinach and tomato, I just cannot eat either of them fresh, so I decided to add my own twist to a classic. Thankfully, the portions were made easy by my 21 Day Fix portion containers.

Minced Garlic (Freebie)                                 Olive Oil (Tsp)

Tomato (2/3 Green)                  Spinach (1/3 Green)


Noodles (1 Yellow)                     Mozzerella (1 Blue)



Caprese Salad

Spinach, tomato and mozzarella... how can you go wrong?! Great meal to get ready or enjoy spring!

Course Main Course, Salad


  • 1 Tsp Olive Oil
  • 1/2 -1 Tsp Minced Garlic
  • 1/2 C Tri-Colored Noodles Can use whole wheat
  • 1/3 C Cubed Mozzerella
  • 1/3 C Fresh Spinach
  • 2/3 C Cherry Tomatoes


  1. Warm up minced garlic and olive oil in small sauce pan.

  2. Add tomatoes and cook down.

  3. Add spinach and cook until reduced down.

  4. While those are all cooking, in a separate pan, cook noodles according to package.

  5. When noodles and tomatoes/spinach are down, remove from pans and combine. Let cool for a few minutes.

  6. Add cubed mozzerella and enjoy!
