The 21 day fix has an unlimited amount of possibilities for meals and snacks. My favorite thing to do is incorporate some of our favorite foods and sneak in new ones that we don’t typically eat. During lent, one of my top go-to proteins is shrimp and trying to find different ways to change it up can be hard some times.

When you are measuring things like zoodles or anything else frozen, make sure you write down on the bag how many cups it was fresh. When frozen, they will shrink and decrease drastically, but still count as it was fresh.

This recipe can also be multiplied for double or family size!

Garlic Shrimp & Zoodles

Perfect change up from rice or noodles. Zoodles are delicious and so easy to cook up in a hurry! With a lemony garlic sauce covering shrimp, great for any time of the year!

Course Main Course
Servings 1

  • 3/4 C Shrimp
  • 2 Tsp Minced Garlic
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Olive Oil
  • 2 C Fresh Zoodles

  1. Warm up olive oil in small sauce pan.

  2. Sauté minced garlic until lightly golden. Add lemon juice and stir.

  3. Add fresh or frozen shrimp. Cook through.

  4. Add zoodles and cook until al dente. (I typically like them with just a little bite to add some texture, but cook them to your liking!)

  5. Enjoy!
