Breakfast Bowls

For those busy moms who make sure everyone else is fed before walking out the door, usually forgetting to make themselves something, this is for you. Instead of the candy bar or gas station donut, make this healthy and hearty breakfast ahead of time and grab one out of the freezer before you go. Warm it up in under two minutes and start your day off with protein to begin with some mental clarity and the mental energy boost from the carbs.

Start with browning the ground sausage over medium/high heat in a large skillet. Turkey sausage would be a great substitute for this as well. Once the sausage is done, set it aside in a large bowl.

In the same skillet, add 2 tablespoons of olive oil and toss in the diced potatoes. Cook them until they are tender, a fork should slide right through them. (If you want to add an extra touch, you can boil the diced potatoes for 5 minutes. Then pat dry as much as you can. Finish them as directed above. This just gives a softer texture inside with a crispier outside, but definitely not necessary.) Add the vegetables to the potatoes about half way through them cooking. They won’t take as long, but don’t need to be cooked on their own. Feel free to omit if you aren’t a fan. Once potatoes and veggies are tender, add them to the sausage and combine. Set aside.

If there is no oil left in the pan, add 1 tablespoon to keep your eggs from sticking. Whisk the eggs and milk together and scramble in the same skillet. Cook them to your liking and add to the sausage and potatoes when finished. Enjoy!

*If you would like to freeze these, it makes about 8 servings. Place them in freezer safe containers and let cool completely before freezing. These are also portioned out for 21 day fix, if necessary, keep all ingredients separate and portion out with 21 day fix cups.

Ingredients
  

  • 2 lb. Sausage ground
  • 2 C. Potatoes diced
  • 6 Eggs
  • 1 C. Milk
  • 2-3 C. Pepper and Onions diced

Instructions
 

  • Brown sausage in a large skillet over medium heat. Set aside.
  • In the same pan, add 2 tbsp. olive oil and diced potatoes. Cook until tender. If you choose to add veggies, cook them with potatoes. Mix with sausage and set aside.
  • Whisk together eggs and milk and scramble in the same pan. Add oil if you need to so they don't stick. Once finished, add to sausage and potatoes.
