Energy bites are a ideal snacks for the entire family. They are so versatile and almost any of your favorites can be added while most things can be taken out or substituted for. We love throwing them in our lunch bags or grabbing them on the way out the door for a quick snack. You can make as many or as few as you need, eat some and toss the rest in the freezer!
Start by mixing all of your ingredients in a large bowl. Place bowl in fridge for about an hour or freezer for 30 minutes. They just need to firm up a little, to make rolling them easier.
While they are in the freezer, I like to prep a baking sheet or two depending on how big of a batch I am making. All you need is parchment paper and a cookie scoop. This is also clean up and put all the ingredients away.
Once slightly firmed up, use your scoop and place the balls on the prepared trays. Once you get a tray full, roll them by hand to finish shaping them. You can either store them in an air tight container and keep them in the fridge for about a week or place them back on the tray and flash freeze. Once frozen, place them in a freezer safe container. If frozen they should last about 1 year.

Granola Balls (Energy Bites)
Ingredients
- 1 C. Old Fashion Oats
- ⅔ C. Shredded Coconut
- ½ C. Peanut Butter
- ½ C. Flaxseed ground after measuring
- ½ C. Chips chocolate or white
- ⅓ C. Honey
- 1 tbsp. Chia Seeds
- 1 tsp. Vanilla
Instructions
- Mix together all ingredients in a large bowl and stir until completely combined.
- Chill in fridge for 1-2 hours or freezer for 30 minutes. Use cookie scoop or tablespoon to measure and roll in to balls.
